Recipe: A vegan Morrocan tagine

Being at uni and blogging has proved to be a real challenge for me, although nothing has been published for over a month now that hasn't stopped me from writing. 
A long list of unpublished work awaits for a spark and a dash of confidence to make it alive, and although that hasn't happened yet a Saturday lunch did bring back memories of what I enjoy most.
Making food and then eating it!

This post wasn't planned but I'd be a bit stupid if I didn't cease this opportunity to jump back on the saddle and inject some colour into my life!

Here's my little experiment!

A vegan vegetarian Morrocan tagine with couscous


Ingredients:


For the tagine:


A glug of olive oil
An onion,diced
Two garlic cloves
A stock cube (don't dilute)
One orange sweet potato, peeled and diced
3 baby potatoes, diced
A can of drained chickpeas
Half a can of chopped tomato
Half a lemon
Some black pepper
A dash of ginger and chilli powder

A squeeze of some argave syrup (optional)


For the couscous:


One part couscous to one and a half parts of whatever diluted stock you like

Some black pepper
Fresh tomato, diced
A glug of olive oil



Method:

For the tagine:

Fill a saucepan with boiling water and place on the stove to cook your diced baby potatoes. When they are half cooked add your peeled and dices sweet potato

Add your olive oil to a saucepan, add the onions and garlic and allow to become soft and translucent.

Add the potatoes, ginger, chilli and the drained chickpeas, stir and add the canned tomato with a squeeze of the argave syrup and the juice of the lemon.

Allow to cook for 10-15mins until everything is incorporated!


For the couscous:

Add the couscous to a saucepan on a medium heat and add the boiling stock. Put a lid on the saucepan so that the stock can be absorbed. 

Once absorbed, stir the couscous so it becomes a little sticky and add the fresh tomatoes and black pepper.

Get a plate, place some couscous on the plate and create a well into the middle to add your tagine. 

Garish with whatever you like, I've used some onion salad I hd left over from a previous meal.
